This is totally random but I think my favorite prince is Albert the Navigator. I love what he said about the world needed more intellectuals and less princes, though I have nothing against princes, per say! ?

After Princess Charlotte divorced Prince Pierre, did he discard the name of Grimaldi and go back to his original surname of Polignac?

No, since his surname had been legally changed via sovereign ordinance, he retained the name and likewise the title Prince Pierre of Monaco until his death.

That is simpy not true: "the Grimaldi dynasty is the oldest ruling dynasty of Europe".

The Maison de Monaco is one of the oldest ruling dynasties and it comprises of the family Grimaldi (until 1731), the family De Goyon de Matignon (until 1949) and the family De Polignac (until present). Yes, yes, they have adopted the surname Grimaldi but that does not mean it is the same family.

When you are neglecting this and start being "creative" then there are much, much older reigning dynasties. Denmark, for an example. The United Kingdom, for an example. Sweden even, since they can also trace back to older Houses than the Bernadottes only...

No creativity necessary. Ever since the Grimaldi family terminated its collective ownership of Monaco, the lordship (and eventual principality) has been inherited each time directly from a parent, grandparent, wife, uncle or nephew, thus kept within the immediate family. The two husbands who took over rule of Monaco from their wives handed it on to their sons by their ruling wife, so it remained in the same direct line.

But there are indeed other European royal dynasties which are arguably even older.

She started with the courtesy title Lady Mary Victoria Douglas-Hamilton, as her father was a Duke. When she married Albert I she became Her Serene Highness, The Hereditary Princess of Monaco, but became Lady Mary again when the marriage was annulled. Then she became Countess Mary Victoria Festetics de Tolna on her second marriage, finally ending up Her Serene Highness Princess Mary Victoria Festetics de Tolna, when her second husband, Taszilo Festitics, was made a Prince by King Francis Joseph I of Hungary in 1911.

It is through Lady Mary that the Grimaldis are related to the other reigning monarchs of Europe (as well as more than a few non-reigning ones).

Church annulment aside, the princess was able to remarry in Hungary prior to her divorce in Monaco being finalized, so I doubt she ever had the need to revert to her birth title.

This is the first time I've read that the Grimaldis are linked to the House of Merode through the wife of Prince Charles III.

Which Prince Charles III? What I can say is that through the Merodes, the Savoy-Aosta branch share links as Antoinette de Merode and Louise de Merode were sisters, and in turn, Prince Lorenz, husband of Princess Astrid of Belgium who is a direct descendant of Louise de Merode.
